Savory cornbread stuffed with emmental cheese, smoked turkey and vegetables

Preparation time: 30 minutes

Cooking time: 35-40 minutes

Serves: 4 persons

 

Ingredients

  • 150 gr corn flour
  • 150 gr all purpose flour
  • 12 gr baking powder
  • 2 tsp salt
  • 120 gr Lurpak® Lighter butter, melted
  • 250 gr milk
  • 1 egg
  • 1 green pepper, thinly chopped
  • 120 gr Arla® Emmental cheese, cut into small cubes
  • 10 slices smoked turkey, chopped
  • 15 cherry tomatoes, chopped
  • Salt
  • Freshly ground pepper

 

Directions

In a large bowl, add corn flour, all purpose flour, baking powder, salt and stir well.

Add melted Lurpak® Lighter butter, milk and the egg and whisk until smooth. Leave aside to rest until you prepare the rest.

Using a sharp knife, cut on a wooden chopping board, the green pepper and the Arla® Emmental cheese into cubes, the cherry tomatoes into slices and chop the smoked turkey.

Add the ingredients in the corn flour mix and stir well.

Butter individual muffin moulds well, pour the mix evenly into the moulds and bake in a preheated oven at 190ο C for 35-40 minutes.

When the cornbread muffins are ready, take them off the oven and let them cool off.
