Enjoy a lovely avocado toast with fresh tomatoes and creamy Arla melted cheese. It is dressed to impress with fried bacon and eggs, as well as a light sprinkling of fresh parsley on top. The delicious sandwich makes a great addition to any breakfast or brunch table, with fresh and savoury flavours that are sure to brighten any meal.

Toast
- 15 g Butter
- 4 slices One day-old wholemeal bread (approx. 125 g)
- 1 Avocado
- 3 Arla Havarti cheese slices
- 75 g Sliced cherry tomatoes
Bacon and eggs
- 4 slices Bacon slices
- 2 Eggs
- ½ tsp Coarse salt
- Freshly ground pepper
Garnish
- Flat-leaf parsley
Instructions
Toast
- Spread butter on half the bread slices.
- Mash avocado with a fork and spread it on the remaining 2 bread slices.
- Cut cheese in half, place three slices on the avocado mash, and finish with tomato and bread on top with the butter side up.
- Toast the sandwiches for approx. 7 minutes until they are golden and the Arla cheese has melted.
Bacon and eggs
- Meanwhile, put the bacon slices in a cold pan and fry them over high heat for about 2 minutes. Turn down the temperature to medium heat and continue to fry the bacon until golden and crispy. Let the bacon drain on a piece of paper towel.
- Crack eggs into the pan and fry them over medium heat for approx. 5 minutes or until the egg whites have set.
- Sprinkle with salt and pepper.
- Serve the 2 toasts with fried egg, bacon, and parsley on top.
