Avocado Toast

Enjoy a lovely avocado toast with fresh tomatoes and creamy Arla melted cheese. It is dressed to impress with fried bacon and eggs, as well as a light sprinkling of fresh parsley on top. The delicious sandwich makes a great addition to any breakfast or brunch table, with fresh and savoury flavours that are sure to brighten any meal.

 

Ingredients

2 servings   

Toast

  • 15 g Butter
  • 4 slices One day-old wholemeal bread (approx. 125 g)
  • 1 Avocado
  • 3 Arla Havarti cheese slices
  • 75 g Sliced cherry tomatoes

 

Bacon and eggs

  • 4 slices Bacon slices
  • 2 Eggs
  • ½ tsp Coarse salt
  • Freshly ground pepper

Garnish

  • Flat-leaf parsley

 

Instructions

Toast

  1. Spread butter on half the bread slices.
  2. Mash avocado with a fork and spread it on the remaining 2 bread slices.
  3. Cut cheese in half, place three slices on the avocado mash, and finish with tomato and bread on top with the butter side up. 
  4. Toast the sandwiches for approx. 7 minutes until they are golden and the Arla cheese has melted.

Bacon and eggs

  1. Meanwhile, put the bacon slices in a cold pan and fry them over high heat for about 2 minutes. Turn down the temperature to medium heat and continue to fry the bacon until golden and crispy. Let the bacon drain on a piece of paper towel.
  2. Crack eggs into the pan and fry them over medium heat for approx. 5 minutes or until the egg whites have set.
  3. Sprinkle with salt and pepper.
  4. Serve the 2 toasts with fried egg, bacon, and parsley on top.
