Make veggies taste delicious with our easy lunchbox laces. They're the perfect packed lunch idea for kids.
Ingredients
14 pieces
- 320 g Ready Rolled puff pastry
- 150 g Butternut squashes (Peeled and roughly chopped)
- 2 tbsp Olive oil
- 3 tbsp Pesto
- 100 g Arla® Cheddar
Instructions
Step 1
Pre-heat your oven to gas mark 6, 200°C, fan 180°C. Place your butternut squash on a parchment paper lined roasting tray. Drizzle with olive oil, season and pop the tray in the oven for 25-30 mins.
Step 2
Once cooked, removed from the oven and blitz your butternut squash until smooth, either in a blender or with a hand blender. Add your pesto and stir together until fully mixed.
Step 3
Now let's make our laces! Roll out your puff pastry and spread the butternut squash mixture on top, leaving a bit of space free around the edge. Sprinkle with around 2/3 of your cheese.
Step 4
Fold your pastry in half, pushing the edges together. Fold again, then cut this into 12-14 thin strips. Twist each strip a few times and lay them on a baking tray lined with baking paper.
Step 5
Scatter the rest of your cheese over the strips and put in the oven for 15 mins until golden. Pop these in your kid's lunchbox as a healthy snack to fuel them for the rest of the day.
Enjoy!
