Black burger buns

Ingredients

Serves 20

  • 25g yeast
  • 100ml cold milk
  • 5 eggs
  • 1 tbsp black food colouring
  • 2 tsp sugar
  • 1½ tsp salt
  • 600g wheat flour
  • 200g Lurpak® unsalted butter in foil, soft
  • Little water
  • Black sesame seeds

Ingredients for the burger (serves 1)

Method – Burger Buns

  1. Add the milk and yeast to the mixer bowl and dissolve the yeast.
  2. Add the eggs and black food colouring, whisk the mixture, then add the sugar, salt and flour (reserve about 50g of flour).
  3. Knead the dough with the dough hook attachment on the lowest speed for about 10 minutes.
  4. Add the butter and remaining flour to the dough and knead for about 2 minutes on the lowest speed, until the butter is fully incorporated into the dough.
  5. Knead for about 10 minutes on medium speed, until the dough starts to pull away from the sides of the bowl and forms a ball around the dough hook.
  6. Divide the dough into 20 equal pieces and shape them into balls – there is no need to flour the kitchen counter. Gently press the balls to flatten them slightly.
  7. Place the buns on two sheets of baking paper and leave them rise, covered, in the fridge for 8–24 hours.
  8. Remove the buns from the fridge and leave them in a warm place for about 1 hour to rise.
  9. Brush the buns with water, sprinkle with sesame seeds and bake on the middle shelf of the oven for 10–12 minutes at 200°C.

Assembling the burger

  1. Cook the beef burger patty in a frying pan or on a grill with a little oil.
  2. Towards the end of cooking, place 2 slices of Arla Gouda on top of the patty and allow them to melt.
  3. Cut the burger bun in half and spread mayonnaise over the bottom half.
  4. Add the lettuce, the burger patty with the melted Gouda, the tomato and the onion.
  5. Top with the other half of the bun and serve immediately.
