Cinnamon rolls

Why make cinnamon rolls, when it’s easier to make cinnamon roll cookies! The Arla cinnamon flavored cream cheese frosting is highly addictive.

Ingredients for frosting

* 1 cup cream cheese softened (226g)

* 1/2 cup unsalted butter softened (113g)

* 330r powdered sugar

* Sachet vanilla

* 1 tablespoon of ground cinnamon

Method

- Start by sifting the powdered sugar with the cinnamon and set it aside.

- Now, cream the softened cream cheese and butter together in the bowl of an electric mixer, for about 2 minutes, until light and fluffy.

- Add vanilla extract. Mix to combine.

- Add powdered sugar and cinnamon mixture to the bowl and mix. Place in fridge.

 

 Ingredients for biscuit

* 114g salted butter, slightly melted

* 50g granulated sugar

* 100g light brown sugar

* 1 sachet vanilla

* 1 large egg

* 190g all-purpose flour

* 1 tsp baking soda

* ¼ tsp baking powder

Method

- Beat the butter and sugars together for 1-2 minutes until sugar is dissolved. Add vanilla and egg and mix until combined.

- Mix in the flour, baking soda, and baking powder until fully combined. Place in the fridge for 20 minutes to chill. Preheat the oven to 180°C.

- Make equal size dough balls. Roll between your hands and drop into the cinnamon sugar mixture.

- Place cookies on the cookie sheet leaving about 2 inches between for them to spread.

- Bake for 12 minutes or until edges are golden.

- Once they cool down (20 minutes in fridge) cover with a generous amount of frosting.

 

I prefer to add them in fridge and eat them cold! Trust me you won’t want them any other way!
